The Crystal brand has a rich tradition, starting in 1923 when Alvin Baumer, who came to New Orleans after the Civil War, discovered a hot sauce recipe labeled "Crystal Pure" in a drawer at his sno-ball syrup production company. Renamed Baumer Foods, Inc., the company grew quickly and moved to a larger plant in the Mid-City neighborhood of New Orleans.

Today, Crystal is a third-generation, family-owned-and-operated business. Alvin Jr. works alongside his son, Alvin "Pepper" Baumer III, who was given his nickname in the womb by his grandmother, Dottie Brennan, one of the original proprietors of Commander's Palace.
